Let Thy Food be Thy Medicine

Here’s what I’m serving up today at Wellness Wednesday- A Cranberry Walnut Quinoa Salad.

Perhaps you haven’t heard of this South American hearty grain that is a great substitute for couscous and rice. Quinoa (keen-wah) is packed with protein (12-18%), even more than wheat. Furthermore, it has more lysine than wheat or rice, which is an essential amino acid that helps with calcium absorption, building muscle protein, and the body’s production of hormones, enzymes and antibodies. Not only is it good for you, but it is delicious too! You can buy it at Trader Joe’s and cook it on the stove in 15 minutes if you know how to boil water.  Or come in today for an acupuncture treatment and taste it yourself!
